In Spain and throughout the EU, the term Cava means 'sparkling
 wine made by the traditional method of fermentation in the bottle and
 produced in specified areas notified to the relevant authorities'. 
95% of all Cava wine comes from Catalonia, and some 75% of that is made
 in and around the town of Sant Sadurní d'Anoia.
Grapes used in making Cava must come from listed vineyards.  The wine may be made 
only from Parellada,
 Xarel-lo, 
Macabeo and/or
 Chardonnay
 grapes, and Monastrell
 and/or Garnacha
 for the pink version, known in Catalonia as Cava rosat, rosado
 or rosé for export markets.
